Mac & Cheese (From Scratch)

From the first day we opened up our café in Pike Place Market, we started slinging mac and cheese. Now, nearly 20 years later, we consider ourselves professionals on how to make the perfect mac. 

Of course for us, it’s all about the cheese. Now, you may be tempted to make these recipes with another cheese, but Beecher’s Flagship is really what delivers the flavor, so be sure to stock up before you get started.

We’re an open book, so here we’ve shared how to make our well-known and loved “World’s Best” Mac & Cheese from scratch. Plus, if you’re looking to kick up the flavor, we’ve added a collection of embellished macs that will really impress everyone around your table.  So dig in! How To Select: It all comes down to two questions – What are you craving? How much time do you have? These recipes aren’t complicated, but the amount of time needed to make a recipe from scratch can vary, so be sure to scan the prep times and ingredients before you get started! Short on time? Curried Cauliflower Mac & Cheese

This one hit us like a freight train in our test kitchen. The addition of curried onions and cauliflower make for a truly new and inventive spin on our all-time favorite “World’s Best” Mac & Cheese. At first, we weren’t quite sure how this one was going to turn out, but as a recurring favorite menu item at our Beecher’s restaurant in New York City, we’re all in agreement that this is a no-fail combination: sharp Flagship cheese with curry spice and fragrant cauliflower. The way the ingredients come together may just change how you cook.

Buffalo Chicken Mac & Cheese

Do you love spicy, zesty, protein-packed recipes? If you answered yes, this one's for you! Wings be darned, you’re sure to walk away from this mac and cheese full and satisfied, and with clean fingers to boot! Topped with both shredded Flagship cheese and blue cheese crumbles, this recipe is sure to be a fan favorite. Don't like blue cheese? Swap with your favorite crumbles or more shredded Flagship! And, if you like extra spice, you can always add more buffalo sauce. But remember to add slowly and taste as you go… this homemade Buffalo sauce packs a punch those bottled brands...

"In Napoli, where love is king..." This pesto recipe is one "Mombo Italiano" flavor married perfectly to our robust Flagship sauce. Pesto fusilli alla scilliana, LOOK OUT. This is a meal all on its own, a savory force to be reckoned with. If you love pesto and love cheese - you struck gold because this is the easiest and tastiest combination of the two you'll find!

Okay – if you’ve never tried Mama Lil’s Sweet Peppers before, you are definitely missing out. Mama Lil’s is a crowd favorite here at Beecher’s and they’re a staple of the Northwest, but sweet pickled peppers in any form are one of the most fun Mac & Cheese add-ons you'll come across. Roasted Mushroom Mac & Cheese

The debate of the century… to add mushrooms or to not add mushrooms? For us – and for mycophiles everywhere - the answer is always obvious. YES to all the mushrooms! These roasted mushrooms add a hearty touch to our traditional “World’s Best” Mac & Cheese dish. If you like mushrooms on your pizza or stuffed and broiled, this will be your next go-to favorite. Red Fresno Sriracha Mac & Cheese

A Beecher's favorite! This Red Fresno Sriracha sauce is a Kurt Beecher Dammeier recipe, but is made daily and used at our Seattle steakhouse, The Butcher’s Table, as an accompaniment to our Mishima Reserve American Wagyu steaks. We decided to try this one because, from time to time at the restaurant, we see people dipping their mac into the sriracha… Okay, we admit it… it's us. We’re "people." Soooo, can you blame us when we decided to mix it in? You NEED to try it and find out for yourself!

Butternut Squash Mac & Cheese

Perfect for cold weather – and tastes just like fall! This recipe screams comfort food and is the delicious side for a date-night meal or even an entrée for a cold night in. The cubed butternut squash adds a soft yet noticeable texture that you couldn’t get with just the noodles. For anyone who likes multiple textures in their food, this is the recipe! Not to mention that the butternut squash sauce and our Flagship and Just Jack cheeses complement each other beautifully.
