Instructions
In a medium pot, combine two packages of Beecher’s Chicken & Vegetable Soup with 1/2 cup water. Stir to combine, then cover and bring to a gentle simmer over medium heat.
While the soup warms, prepare the dumplings. In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
Add the buttermilk, melted butter, and chopped herbs to the dry ingredients. Using a wooden spoon or spatula, gently stir until the ingredients are just combined. Be careful not to overmix to keep the dumplings light and tender.
Once the soup is simmering, drop tablespoon-sized portions (about the size of a quarter) of dumpling batter into the pot, spacing them evenly across the surface.
Cover the pot, reduce the heat to low, and let the dumplings steam gently for 10–12 minutes, or until cooked through.
Remove from heat. Finish with a sprinkle of flaky sea salt, a few twists of freshly cracked pepper, and a handful of parsley leaves.
