Instructions

Preheat oven to 450°F.

Pour Beecher’s Smoky Cauliflower Bisque into a medium saucepan and bring to a simmer over medium-high heat, stirring occasionally.

In a small bowl, combine the cornstarch and heavy cream. Stir until smooth.

Slowly pour the cream mixture into the soup while stirring. Add paprika, granulated garlic, and black pepper.

Once the soup thickens, remove from the heat and add in the Greek yogurt and cream cheese. Stir until smooth, then fold in 1 1/2 cups of the grated cheese, reserving 1/2 cup for topping.

Pour the mixture into a baking dish or cast-iron skillet, and sprinkle with the remaining cheese. 

Bake for 15 minutes, then broil for 4 minutes, or until bubbling and golden brown.

Remove from oven. Serve with crackers, crostini, or sliced apples—and enjoy!

  • 2 cups (7 ounces) grated Beecher’s Smoked Flagship cheese 
  • 4 ounces cream cheese, softened 
  • 1/2 cup Greek yogurt 
  • 2 tablespoons cornstarch
  • 1/4 cup heavy cream 
  • 1 teaspoon paprika 
  • 1 teaspoon granulated garlic 
  • 1/2 teaspoon black pepper
