Background
This vibrant, flavor-packed dish is a cozy and modern take on shakshuka, the beloved North African and Middle Eastern egg dish simmered in spiced tomato sauce. Here, the bold heat of harissa and the tangy depth of Beecher’s Tomato Cheddar Soup create a rich, savory base, while sweet peppers and onions add mellow warmth.
The real twist? Melty, spicy Beecher’s Marinated Peppers Cheese Curds, which soften into luscious pockets of flavor and deliver the kind of satisfying cheese pull that makes this dish both visually irresistible and totally crave-worthy. It’s an effortless one-pan meal that feels both comforting and just a little bit indulgent.

Cooking and Serving Tips
For best results, make sure your soup is fully thawed before starting, so it simmers and reduces evenly. If you’re sensitive to heat, start with one tablespoon of harissa and add more to taste.
To keep the eggs from overcooking, check them frequently after the 5-minute mark—covering the pan traps steam and speeds up the process. And don’t skip the crusty bread; it’s perfect for scooping up the saucy eggs and cheese. This dish also pairs beautifully with a lightly dressed herb salad or a glass of chilled rosé.

Recipe
Instructions
In a stainless steel or cast iron skillet, heat olive oil over medium heat.
Add the sliced onion, sprinkle with salt, and cook until softened, about 5 minutes. Add the bell peppers and sauté for an additional 4 minutes.
Stir in the harissa and cook until fragrant, about 2 minutes. Add the Beecher’s Tomato Cheddar Soup and stir to combine. Bring the mixture to a simmer, then reduce heat to low and let cook and reduce for 8–10 minutes.
Using a large spoon or ladle, make a well in the sauce and crack an egg directly into the divot. Repeat with the remaining eggs, spacing them evenly around the pan.
Nestle the Beecher’s Marinated Peppers Cheese Curds between the eggs.
With the heat on its lowest setting, cover the pan and cook until the egg whites are set but the yolks remain runny or jammy, depending on your preference—about 5–8 minutes.
Remove from heat, sprinkle with sumac or black pepper, and serve immediately with slices of toasted crusty bread.
